6 apples | |
24 walnut kernels | |
200 g powdered sugar | |
45 cl of red wine | |
1 cinnamon stick | |
1/2 vanilla pod | |

2 pods of cardamom | |
4 tbsp. honey | |
25 cl of fresh cream |
1. | Peel 4 apples, quarter them, remove seeds and cut the quarters in half. |
2. | Pour the red wine into a large saucepan. Add the sugar and spices enclosed in a muslin. Gently dip the apple slices into the wine and let simmer for about 15 minutes. |
3. | Peel the last 2 apples, remove the seeds and dice them. Put them in a saucepan with 2 tablespoons of water, steam them for 5 minutes, then mash them into a compote. Keep in a cool place. |
4. | Carefully drain the cooked apples. Reduce the wine syrup until it coats the spoon. Let the apples and the syrup cool for 2 hours in the refrigerator. |
5. | To serve, divide the apple slices in dessert plates. Drizzle them with syrup. Place six walnut kernels on the side six walnut kernels on the side and top them with applesauce whipped with honey. Place on the apples one spoonful of fresh cream and bring to the table. |
