Ingredients

2 dozen hollow oysters (large or medium)
50 g stale bread crumbs
1 shallot
Juice of 1 lime
3 tbsp. olive oil
1 small bunch of parsley
Salt, pepper
Coarse salt

Instructions

1.Make the lime sauce: pour the olive oil into a bowl and emulsify it with 3 tablespoons of lime juice. Add the finely chopped shallot, 1 pinch of salt, pepper and mix.
2.Turn on the oven grill. Mix the bread to obtain breadcrumbs. Open the oysters, discard the water and remove any shell debris. Pour a teaspoon of lime sauce into each oyster, cover with lime sauce, cover with breadcrumbs and sprinkle with a little chopped parsley.
3.Place the oysters on coarse salt in small individual dishes that can withstand the heat of the oven. Cook under the grill for 3 to 4 minutes and 4 minutes and serve immediately.
