
2 dozen hollow oysters (large or medium) | |
50 g stale bread crumbs | |
1 shallot | |
Juice of 1 lime | |
3 tbsp. olive oil | |
1 small bunch of parsley | |
Salt, pepper | |
Coarse salt |
1. | Make the lime sauce: pour the olive oil into a bowl and emulsify it with 3 tablespoons of lime juice. Add the finely chopped shallot, 1 pinch of salt, pepper and mix. |
2. | Turn on the oven grill. Mix the bread to obtain breadcrumbs. Open the oysters, discard the water and remove any shell debris. Pour a teaspoon of lime sauce into each oyster, cover with lime sauce, cover with breadcrumbs and sprinkle with a little chopped parsley. |
3. | Place the oysters on coarse salt in small individual dishes that can withstand the heat of the oven. Cook under the grill for 3 to 4 minutes and 4 minutes and serve immediately. |
