
Ingredients
7 queen pippin apples | |
100 g of whole almonds | |
80 g brown cane sugar | |
25 g of butter | |
15 cl of cider | |
1 star of anise |
Instructions
1. | Dip the almonds in a sauce pan boiling water and simmer for 5 minutes. |
2. | Pass them under cold water and eliminate the brown skin that surrounds them. Crush them by passing them quickly to the blender. Wash the apples, cut them into four and deseed them. |
3. | Melt the butter in a saucepan and add the apples. Stir and add the sugar roux, star anise and almonds. Pour in the cider, cover and simmer for 15 minutes. |
4. | Serve this dessert lukewarm with a scoop of almond ice cream or a bowl of fresh cream. |
5. | Our advice: If you don't like star anise, substitute a small stick of cinnamon, a vanilla pod split in two or, to recall in summer, a sprig of rosemary. |
